Biryani asks you to judge two unfinished things at once. The chicken masala should taste slightly too intense on its own; the rice should bend but still resist at its centre. Layer them only when each is ready to finish the other.

Start with bone-in chicken and yoghurt-spice marinade if that is the style you enjoy. Brown onions in patient batches, lifting them while golden because they continue darkening after the oil. Their sweetness and bitterness shape the entire pot. Cook the masala until tomato, yoghurt and spice no longer taste like separate additions. You want a glossy gravy that clings to the chicken, with enough moisture to perfume the rice but not enough to drown it.

The grain tells you when to drain

Rinse basmati gently and soak according to the variety. Boil it in abundant, well-salted water with whole aromatics. Begin checking early. A grain pressed between finger and thumb should break with a firm white thread remaining; perfectly cooked rice at this stage becomes soft during dum. Drain immediately and spread it briefly if steam is pushing it further.

Put masala at the base of a heavy pot, then rice, fried onion, herbs and restrained colour or saffron water. Do not stir. Seal, give the pot enough initial heat to create steam, then lower it. Listen: lively bubbling should settle into a quiet hiss. A heat diffuser helps a thin pot, but time depends on volume and cookware more than any universal twenty-minute rule.

Rest the sealed pot off heat before opening. Lift from the side with a flat spoon so masala and rice travel together while some white, gold and dark grains remain visible. Serve raita and kachumber for freshness, not to repair under-seasoning. Write down the rice brand, soak, drain point and pot next time. That record will teach you more than another recipe promising foolproof minutes.
