One cup of doodh patti is a conversation between tea and milk. A family pot is a negotiation with evaporation. Multiply the ingredients blindly and the last cup may taste cooked before the first is poured.

For one cup, begin with the cup you will drink from. Measure water and milk into it so the final volume has somewhere honest to land. Bring water and loose black tea to a lively simmer; add cardamom if wanted, crushing it just enough to open the pod. Add milk and watch the colour move from beige to the brown you associate with home.

Boiling is flavour, not endurance

Let the tea rise, lower the heat and repeat only as long as the leaf and milk improve. Extended boiling extracts bitterness and creates a cooked-milk flavour that extra sugar merely covers. Strain as soon as the cup tastes complete.

For several people, use a broad enough pot and increase tea more cautiously than liquid. Evaporation occurs at the surface, not per guest. Brew a first family batch while noting water, milk, leaf, simmer time and final yield. The next gathering then begins with evidence instead of somebody’s memory of “a large spoon.”

If guests arrive slowly, make smaller fresh pots. Do not keep finished milk tea simmering indefinitely or repeatedly cool and reheat it. Keep milk refrigerated until needed and follow local food-safety guidance. A thermos changes aroma and can hold a short batch, but it should be clean, pre-warmed and emptied after service.

Ginger, cinnamon or saffron can produce good tea, though none is compulsory. Add one because you want its flavour, not because a spice shelf must be represented. Doodh patti earns affection through repetition: the familiar colour, the right heat in the cup and the person who already knows whether you take sugar.

Wash the pan soon after pouring. Milk film becomes harder to remove and can flavour the next batch if the vessel is merely rinsed. A dedicated tea pot is useful only when it is also clean.
